Lodging
In 2001, the property was sold to the owners of El Pescador in San Pedro, and construction began on El Pescador South—a new fly fishing lodge. Four years later, Todd Robinson purchased the fishing lodge that is now Copal Tree Lodge— a partner of Muy'Ono Resorts. The Fishery
Perched above Punta Gorda and the Rio Grande and just a short boat ride from the Caribbean Sea, this Orvis Endorsed Lodge is a fly fishing paradise. Cast for tarpon and snook on the rivers and in the mangroves, spend the day fishing the flats for permit—or head out to the white sand beaches of the Sapodilla Cayes for bonefish. The majority of our fishing takes place in protected marine reserves and national parks. Southern Belize is best known as a world-renowned permit territory—and, while most anglers who visit the region are intermediate to advanced, our experts are also happy to guide beginners for a one-of-a-kind fly fishing experience. Copal Tree Lodge’s guides are all local to the Southern Belize region and will customize each day’s itinerary to your fishing preference and style. They’re extremely patient, professional and ready to make your trip the best it can be.
The Cuisine
Using seasonal produce, we prepare foods that are culturally significant, fresh, flavorful, and satisfying. At the Garden Table Restaurant, the chef makes wonderful use of the ingredients grown by our farm team and sourced locally from nearby farmers. We also forage the rainforest for wild foods such as the heart of cohune palm, wild herbs, and flavorful leaves and fruits. We invite you to complete your meal with our house roasted coffee, farm raised “bean to bar” chocolate, and a sampling of local rums.
The Garden Table Restaurant can accommodate a variety of diets including vegan, vegetarian, gluten free, or dairy free. Copal Tree Lodge offers a culinary experience to be remembered!
